COCONUT CHUTNEY
¼ teaspoon Stevia
5 capsules Digestazon Plus
5 capsules Aquazon
2 cups grated fresh coconut
1-2 green chilis
1 inch-piece of fresh ginger, peeled and sliced
½ cup fresh mint
¼ cup blanched almonds
½ - ¾ cups water
3 tablespoons lime or lemon juice
½ teaspoon salt to taste

Place all ingredients in food processor or electric blender. For best results, first blend ginger and chilies. Add the almonds, mint, water and then the rest of the ingredients, coconut last. Blend until you get a fine and smooth consistency.
Variations: You can use unsweetened flake coconut or coconut powder. If you use dry coconut, you may need to use more water. You may also try this recipe with yogurt or buttermilk instead of water. Reduce lemon juice in this case.
This is a great appetizer and digestion booster.
